A Recipe for Me

A Collection of Recipes from Lisa and Donna

Soft Nachos

One of my favorites on a chilly day! This recipe is for one or two people depending on how hungry you are and which size tortillas you use.

What you need:

  • 2 6″ Tortillas (home-style or fajita size)
  • Refried beans
  • Grated Mexican cheese blend (more…)

Fried Ravioli

Jotted down on a postcard…

  1. Ravioli
  2. Buttermilk
  3. Dry Bread Crumbs
  4. Olive Oil
  5. Parmesan Cheese, shredded or grated
  6. Marinara Sauce

Dragon Fingers

A tasty variation of the basic stuffed Jalapeno.

What you need:

  • 12 Fresh Jalapeno peppers, gutted and seeded
  • 1/2 lb bulk sausage, regular flavor or spicy if you want to kick it up a notch
  • 1 1/2 T Worcestershire sauce
  • 1 egg
  • A little less than 1/4 C finely shredded cheese
  • A little less than 1/4 C canned seasoned bread crumbs

Stuffed Jalapenos

This is the basic recipe for stuffed jalapeno peppers. You can stuff them with whatever you like. The key is clean them out well and cook them slowly, either over hot coals, or in the oven.

Preheat oven to 350 or charcoal grill to medium high/medium.

What you need:

  • 12 fresh Jalapeno peppers, seeded and gutted
  • 8 oz Philadelphia-brand cream cheese
  • 12 slices of bacon
  • Toothpicks or bamboo skewers

Larry’s Chip Dip

  • 1 package creem cheese, softened
  • a bunch of ketchup
  • a few shakes of dry mustard
  • 1 fork load of horseradish (start with less…you can always add), or 2 half loads…hee
  • a splash of vanilla extract

Mix in a bowl. Chill. Add more horseradish if it isn’t spicy enough for you. It does get a better flavor to it after it has been chilled.
