Jeff’s Chicken Spaghetti

Jeff Hoffman is a helluva cook. He’s been catering my carriage driving event for about eight years now. I vividly recall one year when he served this dish. I finally talked him in to giving me his recipe. Of course, this is my version 🙂

Fried Ravioli

  1. Ravioli
  2. Buttermilk
  3. Dry Bread Crumbs
  4. Olive Oil
  5. Parmesan Cheese, shredded or grated
  6. Marinara Sauce


Vermicelli with garlic and herbs

This is a very simple pasta recipe from the Great Plates recipe magazine by the best of Cooking Light. I recommend blending all the seasonings together before combining with the pasta for even distribution.

What You’ll Need:

  • 8 ounces vermicelli pasta
  • 2 T fresh parsley
  • 2 T lemon juice
  • 2 T olive oil
  • 2 cloves garlic, minced
  • 1 t dried basil
  • 1 t salt
  • 1 t black pepper

What to do:

Cook pasta according to package directions omitting salt and fat; drain. Add parsley, lemon juice, and olive oil; toss to coat. Add minced garlic, basil, salt and pepper.

This is a good side dish to serve with Greek Chicken.
