Dog Boats

This recipe has roots from my childhood. The first time I ever had it, was in the school cafeteria and they used a SPAM-like luncheon loaf not hot dogs. It wasn’t cooked either, as I recall. If it was cooked, it was probably baked and not fried.
Feeds one very hungry man and one petite woman.
- 1 package Ballpark Grillmaster hot dogs (or your favorite brand… use 2-3 hot dogs per person)
- Mashed potatoes (about 1/2C per hot dog)
- Shredded Cheddar-Jack cheese (or the shredded cheese of your choice)
- Paprika (optional)
- Slit hot dogs lengthwise so that you can lay them flat, and score the skin side. Pan fry in a skillet to desired doneness (I like mine to be pretty well done). Remove from skillet and drain on paper towels.
- Preheat broiler.
- Place hot dogs skin-side down on a backing sheet. Put a large dollop of mashed potatoes on each dog. Sprinkle each dog with shredded cheese (you can flatten the potatoes a little so the cheese doesn’t just fall to the sides of the dogs). Sprinkle with paprika.
- Cook under broiler until cheese bubbles–about 2-3 minutes. Remove from oven and serve immediately.
I usually eat one, sometimes two if I’m real hungry. Hubby usually eats three. This is a great kids meal. You can substitute SPAM for the hot dogs if you like SPAM.
