Basic Roasted Potatoes

Use this basic recipe and change it up with different types of potatoes and spices.
Preheat oven 425.
- 1-2 medium-size potatoes per person
- Olive oil
- Salt and Pepper
- Rinse/scrub potatoes, and cut potatoes into quarters.
- Place in mixing bowl and drizzle with olive oil, sprinkle with salt and pepper to taste. Toss, coating potatoes well.
- Spread out on baking sheet (you can cover the sheet with aluminum foil for easy clean up). Bake for 15 minutes. Remove from oven and flip over. Return to oven and bake another 15 minutes or until potatoes are cooked through.
VARIATIONS:
Potatoes: Try russet potatoes first to get the technique. Then try Yukon Gold or red new potatoes.
Seasonings: Lipton dry onion soup mix (if you use this, mix it with the olive oil first, then toss with potatoes. Rosemary, garlic salt, thyme; just about any seasoning you like, will work.
