Soft Nachos

One of my favorites on a chilly day! This recipe is for one or two people depending on how hungry you are and which size tortillas you use.
What you need:
- 2 6″ Tortillas (home-style or fajita size)
- Refried beans
- Grated Mexican cheese blend
What to do:
- Preheat your favorite cast-iron fry pan or griddle over medium-low/low heat.
- Precook beans in microwave 1-3 minutes, just to warm and soft.
- While beans are warming up, heat tortillas 1-3 minutes each side; do *not* brown or overcook; they should be warm and soft.
- Remove from heat and place on dish or cutting board.
- Spread one tortilla with a thin layer of refried beans.
- Top beans with desired amount of grated cheese.
- Place second tortilla on top of cheese and return to pan.
- Heat on each side 1-3 minutes, turning carefully so that cheese doesn’t escape.
- When cheese has melted, remove from heat, placing a plate.
- Using a pizza cutter or very sharp knife, cut into ‘pie pieces’, and serve with your favorite salsa or dip.
Suggestions:
Try different refries… black beans, kidney beans, with or without chopped jalapenos
Try different cheeses… mild, medium or sharp cheddar, Co-Jack or Cheddar Jack, Mexican 4-Cheese Blend
Try different dips… picante, salsa, guacamole, green sauce
