Beefed Up Biscuit Casserole

  • 1 lb ground beef
  • 1/2 c chopped onion or 2T instant onion
  • 1/4 c diced green pepper
  • 2 t chili powder
  • 1/2 t garlic salt
  • 1 eight-ounce can country style biscuits
  • 1 1/2 c shredded cheese
  • 1/2 c sour cream
  • 1 egg, slightly beaten

in a frying pan, brown meat, onion and pepper; drain. stir in sauce, chili powder and garlic. simmer while preparing dough. separate dough into 10 biscuits. press half over bottom of ungreased 9″ square baking pan. in a separate bowl, combine 1/2 c cheese, sour cream and egg; mix well. remove meat mixture from heat. stir in sour cream mixture. spoon over dough. arrange remaining dough on top. sprinkle with remaining cheese. bake at 375 for 25-30 min.

  • note: I also add one can Ro-Tel to the m eat mixture for added flavor.

Vegie Dip

  • 2/3 c cottage cheese
  • 1/4 c skim milk
  • 1/2 t lemon joice

combine in blender until smooth. add:

  • 1 T dried dill weed
  • 1 T beau monde
  • 1 T dried parsley
  • 1 T thin sliced green onion or scallions
